About
Tracy Noelle Zimmerman
Private Chef ~ Plant Based
The short version
Twenty-five years of cooking, fifteen of them plant-based.
I'm Tracy — a vegan private chef based in the Palm Springs area, cooking for homes, retreats, and gatherings across the Coachella Valley. For more than twenty-five years I've worked in the culinary field, and for the last fifteen I've lived and cooked entirely plant-based. That shift changed how I think about food: lighter, more colorful, deeply satisfying, and kinder to the world it comes from.
My cooking leans on the desert's rhythm — citrus and dates in winter, stone fruit and heirloom tomatoes when the heat arrives — and on the farmers and growers who make the valley such a quietly remarkable place to cook. A good meal, to me, is as much about how people feel afterward as how it tastes in the moment.
Alongside the kitchen, I co-authored the vegan cookbook The Compassionate Kitchen and founded Shefdress, a chef-wear brand designed for the women who run professional kitchens. My background in psychology shapes the way I cook, too — food is comfort, memory, and care, and I never forget that when I'm planning a menu for someone's table.

Philosophy
Plant-based, never plain.
Vegan food should never feel like a compromise. I cook so that no one at the table misses a thing — just a beautiful, generous meal that happens to be made entirely from plants. Seasonal produce leads, flavor stays bold, and every plate is built to nourish.
I work closely with each host, honoring allergies, preferences, and the kind of evening you want to create — relaxed and family-style, or quiet and refined. Whatever the setting, my aim is the same: food made with real care, in the warm, unhurried spirit of the desert.
